Se obtiene de un Cuarto Delantero (ítem 4970) mediante la separación del Pecho y el Brazuelo, por un corte recto paralelo al Espinazo, que se inicia en la unión de la 1ª costilla y el esternón, y continúa hasta el espacio intercostal a especificar. El Cogote se retira por medio de un corte entre la 3ª y 4ª vértebras cervicales.

Square Cut Shoulder is prepared from a Forequarter (item 4970) by removing the Neck between the 3rd and 4th cervical vertebrae. The Breast and Foreshank are removed by a parallel cut to the backbone commencing at the junction of the 1st rib and 1st sternal segment continuing to the caudal cutting line at the specified rib.
